Purcell Mountain Farms Organic Multi-Grain Pancake Mix
Grain mix: Organic soft white whole wheat pastry flour, organic spelt flour, organic kamut flour, organic millet flour, organic corn flour, organic rice flour, organic barley flour, organic oat flour, organic rye flour, organic quinoa flour. When prepared according to package directions, the batter was so thin that I had to add significantly more mix to it. There was less rise than most. A nice grain mix, but the finished pancakes were somewhat gummy. PurcellMountainFarms.com
Quaker Oatmeal Pancake Mix
Grain mix: Oat flour, whole wheat flour, soy flour. Instructions call for mix to be “slightly packed” into measuring cup, which might be confusing to novice cooks. When prepared according to package directions, batter was too thin. Excellent rise, good browning. Finished pancakes had a very fluffy interior, with a little texture from the grains, but were a bit dry. They also had a slightly bitter aftertaste. Rabbit Creek Products Multi-Grain Pancake Mix (with Powdered Sugar for Sprinkling on Top)
Grain mix: bleached flour, malted barley flour, yellow corn flour, gelatinized yellow corn flour, rice flour, whole wheat, rye meal, corn meal, oats, rice flour (listed for a second time), soy meal, triticale, barley, millet, flax. This is a JAW (just add water) mix. The mix comes in a gift bag that includes three smaller bags: one of mix, one of grains and one of powdered sugar (the latter was not used). When prepared according to package directions, the batter was too thick; I had to add a little more water. The pancakes had very good rise and nice texture from the packet of grains (although the grains don’t add much fiber). The flavor is just OK, even with syrup. RabbitCreekGourmet.com
