The Well Dressed Food Company North Country Oatmeal Pancake Mix

Grain mix: unbleached wheat flour, oats. I was very impressed with the explicit instructions provided on this package, which specified whole milk and large eggs, among other things. Curiosity: Both oil and melted butter are added to this mix. When prepared according to package directions, however, including a 10-minute standing time, the batter was still slightly too thin, and there were too many large lumps in it. There was less rise than most. The finished pancakes are more delicate than most, with some texture from the oats and a slight gummy texture (probably from the oats). The finished pancakes are also quite good-tasting. Note: When the batter stands an additional 5 to 8 minutes, it thickens dramatically, making for a much better batter consistency and better rise in the pancakes. When chilled overnight and thinned slightly with milk, the batter worked beautifully the next day. WellDressedFood.com

Whole Grain Milling Company

When prepared according to package instructions, all three mixes from this company resulted in thin batters; in two cases, the batters were so thin I had to add additional mix. WholeGrainMilling.net

  • Golden Wheat Pancake Mix. Grain: certified organic whole wheat pastry flour. The batter was so thin I had to add more mix to it. The pancakes had excellent rise. The finished pancakes had a little texture to them, with a flavor that’s definitely stronger than buttermilk pancakes but not unpleasant. Good. The batter was kept overnight in the fridge; the next day, when thinned with a little water, it resulted in pancakes with no problems.
  • Harvest Grains Pancake Mix. Grain mix: organic whole wheat flour, organic oatmeal, organic rye flour, organic hi lysine corn flour, organic buckwheat flour. The visible multiple grains in batter are attractive. The batter was quite thin, but not as thin as the other two varieties. There was not much rise, perhaps due to thinness of the batter. The finished pancakes were good but not distinguished.
  • Hi Lysine Corncake/Waffle Mix. Grain: certified organic whole grain hi lysine corn flour. The batter was so thin I had to add more mix to it. There was good rise. The finished pancakes were a little salty, “corny” and dry in texture, with a slightly bitter taste. Maple syrup helped the taste, but the pancakes were still dry.
