CAPSULE REPORT: With Long Kow's Crystal Noodle Soup, and all you need to do is provide the boiling water and the spoon (chopsticks or a fork are helpful to manage the noodles) to enjoy a bowl of steaming noodle soup made in its own bowl in just three minutes. Overview

If you’ve experienced cello packets of ramen noodles or instant cups of noodle soup, (and is there anyone who hasn’t?), you know that they offer a comforting repast, but not a quality dining experience. Long Kow has upped the ante, using superior ingredients and a large enough portion to make a meal in its own bowl. Just add boiling water, and in three minutes your steaming hot meal is ready. You also need to supply an eating implement—you could slurp the soup from the bowl in a pinch, but the long noodles would present a challenge.

Although the ingredients are freeze-dried, you’d swear they were fresh-made, from the bok choy, mushrooms and spinach to the eggs and tofu. And how satisfying those glassy bean thread noodles are in their savory broth. Well done, Long Kow!

Varieties Of Crystal Noodle Soup

The soups currently come in four flavors, each with a more than ample amount of glistening bean thread noodles (also known as crystal noodles or glass noodles) in a steaming bowl of savory broth. There’s plenty of broth for the broth lovers, plenty of noodles for the noodle lovers, and lots of other good “stuff” to boot.

  • Six Kind Of Mushroom includes cloud ear, enokidake, king oyster, maitake, nameko and oyster mushrooms in a chicken base. (190 calories)

Some like it hot... and they should be sure to try the Spicy Sesame Paste and Spicy Tofu soups.
  • Spicy Sesame Paste is a famous Szechuan “Tan-Tan” recipe, and it is true to its peppery Szechuan roots. It’s chock full of bok choy, which looks as if it were just picked from the garden, and topped with soy protein. (280 calories)
  • Spicy Tofu is another traditional Szechuan recipe, topped with good-tasting tofu. Again, don’t let thoughts of mild tofu blind you: this soup is hot (as in hot chile oil). (290 calories)
  • Vegetables & Eggs has an authentic soy sauce soup base. It’s full of nutritious vegetables like bok choy, carrots and spinach, and is sprinkled with traditional Chinese soft egg flowers. (180 calories)

The soups are very tasty, with the caveat that, as with many Asian products, they are also a bit salty and peppery—even the varieties that aren’t called “spicy.”
