Morning
Why load on calories with muffins and bagels, when you can be just as happy munching on crispy flatbread?
Hard Cheese & Marmalade
Curl a slice of hard cheese on a slice of Crispbread.
Top with strawberry Marmalade (check out La Nouba sugar-free preserves).
Hard Boiled Egg & Caviar
Top Crispbread with sliced hard-boiled eggs.
Top with Swedish caviar and a sprig of dill.
Noon
A bowl of soup and a slice of crispbread is a quick, nutritious and tasty lunch. Or, crispbread, cheese and crudités are portable and work into most food plans.
Cream Cheese, Avocado & Prosciutto
Spread cream cheese on the Crispbread.
Place avocado slices on top of cream cheese and a slice of ham on top of the avocado.
Garnish with fresh basil.
Feta Cheese & Olives
Slice feta onto the Crispbread.
Quarter olives and sprinkle atop the cheese.
Garnish with fresh mint, freshly-ground pepper, and salt.
Snack
Between lunch and dinner, the British enjoy tea and sandwiches. The Swedes suggest a couple of slices of crispbread and a glass of fruit juice.
Curried Egg Salad & Tomato
Boil 4 eggs for 8 minutes, peel and chop finely.
Mix the eggs with 2 tablespoons mayonnaise and 1/2 teaspoon curry powder, adding salt and pepper to taste.
Slice 2 tomatoes and place slices atop 4 slices of Crispbread.
Top with egg salad and garnish with fresh dill or basil.
Cream Cheese & Smoked Salmon
Spread cream cheese on the Crispbread.
Top with smoked salmon.
Garnish with dill and a very thin slice of lemon.
Evening
At dinner serve Crispbread as hors d’oeuvres, with the soup or salad course, or with the cheese course.
Tapenade with Black Olives & Garlic
Put 16 ounces of black olives, 4 anchovies, 1-1/2 tablespoons capers, 15 leaves of fresh basil, 2 cloves of garlic, 3 ounces of olive oil, 1 teaspoon lemon juice, and freshly-ground black pepper to taste in a food processor. Blend.
Place the tapenade on Crispbread and decorate with chopped fresh basil.
Roquefort with Cherry Preserves
Slice the Roquefort and place it on the Crispbread.
Top with cherry preserves.
Great as a snack, with cocktails or as part of a cheese platter.
