Chocolat Céleste English Butter Toffee
Crunchy, Almond-Filled Toffee Squares
CAPSULE REPORT: English-style, fresh-butter toffee is freshly coated in gourmet chocolate and nuts, cut into small squares perfect for an after-dinner cup of coffee or a quick candy fix.
We love Chocolat Céleste’s truffles. While the website has long tempted us with turtles, white chocolate almond bark and the equivalent of connoisseur-level Almond Joys, the English Butter Toffee is our first foray beyond the enrobed ganaches. Now, we can’t wait to try the rest of the “little treats,” as the chocolatier calls them.
A thin slab of toffee, 1/4- to 3/8-inch thick, is cut into one-inch squares, which are then enrobed in a 64% semisweet Schokinag chocolate and sprinkled with chopped almonds. Most squares are completely enrobed, but as you can see in the photo at the right, there is caramel-colored toffee underneath.
This is a restrained and elegant toffee: Although it is called “butter toffee,” it is not dripping with butter like Enstrom’s (a product with such a high percentage of butter that it must be refrigerated). Nor is it particularly sweet—the sugar is at a low threshold. You could eat the whole box and not feel like you had ingested a lot of sugar. It’s a toffee for people who like their candy just slightly sweet—or those who want to eat a whole lot of it.

Chocolat Céleste’s toffee, nicely crunchy, goes very well with a cup of coffee or espresso after dinner—and the squares are the perfect size to sit on the saucer.
