Jackson Hole Pancake Company

  • 5-Grain Flapjacks. Grain mix: white flour, whole wheat flour, rolled oats, sunflower seeds, corn meal. The mix and batter have a pleasant spice aroma. I used melted butter (as opposed to canola oil) and did not use the optional honey. When I prepared the batter according to package directions, including a 5-minute standing time, it was almost as thin as water. I added more than an additional 1/2 cup of mix (after starting with 1-1/2 cups), and the batter was still too thin; but after standing another 10 minutes, the consistency was better. There was fine rise and good browning. The finished pancakes were tender (a surprise after stirring in more mix several times), with some texture from grains and sunflower seeds. The pancakes had a pleasant spice flavor and were almost sweet enough without syrup (but were better with it). Very good flavor.
  • Buckwheat Pancake Mix. Grain mix: N/A. I used vegetable oil (as opposed to butter). When prepared according to package directions (including a 5-minute standing time), the batter was much too thin. I put it aside to stand for longer (I couldn’t add more mix, as I’d received only a sample size and had used all of it to make the batter). After another 20 minutes, the batter was still much too thin. I covered it and refrigerated it overnight; refrigeration will thicken the batter. The next day, the had separated, which can happen with refrigeration and is no big deal. But when I had stirred it to blend everything, it was still much too thin. The batter spread out wildly on a preheated griddle. There was almost no rise. The finished pancakes were extremely gummy with an okay flavor but a slightly bitter aftertaste.
  • Hearty Oatmeal Pancake & Waffle Mix. Grain mix: N/A. Mix and batter have pleasant spice aroma. When prepared according to package directions (including a 5-minute standing time), batter was somewhat too thin and had several large lumps I had to push out with the back of a spoon. Despite the batter’s thinness, batter had very good rise and good browning. Finished pancakes had a little texture from oats, a slight spice flavor and a slightly gummy texture. Good.
  • Whole Wheat & Honey Pancake Mix. Grain mix: N/A. I used butter (as opposed to vegetable oil). When prepared according to package directions (including a 5-minute standing time), the batter was so thick I had to add more water to it. A good rise with delicate browning. The finished pancakes have a pleasant spice aroma and flavor. They’re hearty but not gummy, with a definite whole wheat presence. Very good with maple syrup.

King Arthur Flour Pancakes

  • Light ’n Tender Oatmeal. Grain mix: organic whole grain oat flour, King Arthur all Natural White Whole Wheat Flour, King Arthur Unbleached Flour, organic oats, organic oat bran, malted barley, organic flax flour. I used vegetable oil to prepare the batter (as opposed to butter). The batter is much too thin when mixed according to package directions. I had to add more mix (twice) to get it to a better consistency, and it was still too thin. I used much less salt than suggested to make the batter. There was a good rise during baking. The finished pancakes had some nice texture from oat flakes, with a true “light ’n tender” consistency, but they tasted slightly of baking soda.
  • Multi-Grain Buttermilk. Grain mix: King Arthur All Natural White Whole Wheat Flour, whole rye flour, whole-grain oat flour, oat bran, flax flour, corn flour, malted barley. I used vegetable oil to prepare the batter (as opposed to butter). When prepared the mix according to package directions, the batter was too thin and remained that way, even after standing for 15 minutes. I used the suggested amount of salt for the batter but found it excessive. There was a nice rise during baking and good browning, but the finished pancakes tasted of salt and baking soda.

Kodiak Cakes All Natural Frontier Flapjack & Waffle Mix

Grain mix: “100% whole grain wheat flour, 100% whole grain oat flour.” When prepared according to package directions, the batter was too thin; I had to add more mix to get it to a good consistency. There’s a very good rise during baking, with more bubbles on the pancake surface than most. Baked pancakes are obviously not made with white flour, but they’re not hardcore enough in flavor or appearance to put off those used to only white flour items. I love the flavor of these pancakes and have been eating them for years, but I do not list them as a favorite because of the batter consistency issue. KodiakCakes.com
