Healthy Recipes For A Fun, Fruit-Filled Dinner

 

CAPSULE REPORT: In days passed, a grapefruit recipe meant broiling halved grapefruits sprinkled sugar, until it caramelized. Or, grapefruit segments were added to luncheon salads. But, without disparaging the classic, grapefruit recipes are so much more exciting than that. This healthy fruit is not only full of vitamins A and C, dietary fiber and lycopene, it’s also high in flavor and color, and works as a complement to foods as varied as bruschetta, shrimp, sushi and desserts. Here, we present an entire dinner of grapefruit recipes: courses that use grapefruit. Note: Many of these recipes call for Rio Star Grapefruit, which is a hybrid of the two reddest grapefruit varieties—Rio Red and Star Ruby grapefruit. Rio Star Grapefruit & Vodka Cooler

Start your dinner party off with a blush: Serve your guests a beautiful blush-colored grapefruit-and-vodka cocktail. This is also a delicious cocktail for brunches and showers. You can leave out the vodka for a “virgin”cocktail option. Recipe yields 6 servings.

Ingredients

  • 5 Texas Rio Star Grapefruits, juiced
  • 1 small lemon, juiced
  • 2/3 cup vodka
  • 1-¼ cups sparkling mineral water,
    chilled
  • Plenty of ice cubes

Preparation

  1. Mix grapefruit juice, lemon juice, vodka, & ice cubes in a large serving pitcher.
  2. Stir in mineral water and serve in wine glasses.

Think of this vodka cocktail for cocktail parties, brunches and showers.

 

Grapefruit Mimosa

Perfect for celebrations such as New Year’s Eve, Valentine’s Day, birthdays and anniversaries, the Grapefruit Mimosa is a twist on the classic Champagne cocktail made with orange juice. Recipe yields 12 servings.

Ingredients

  • 9 cups chilled, fresh grapefruit juice
    (squeeze 13 grapefruits)
  • 3 cups Champagne, chilled
  • 1 Texas Rio Star grapefruit, cut into
    wedges for garnish
  • Optional mint sprigs for garnish

Preparation

  1. In a pitcher, stir together juice and champagne.
  2. Serve in champagne flutes.
  3. Garnish with a wedge of grapefruit and fresh mint.
Grapefruit Mimosa
Serve this sparkler on special occasions, like Valentine’s Day.
