CAPSULE REPORT: Mix some eggs and butter with contents of the jar, toss into a pie crust, put it in the oven, and you have a terrific pecan pie! Those who want an eggless or vegan pecan pie can leave out the eggs and substitute for the butter. For home dining or for a gift, this is the best pecan pie we’ve had in a while. Now, there’s a new Chocolate Pecan Pie-In-A-Jar, making the decision tough (how about a small slice of each?).
First, let’s clarify something. The pecan pie isn’t in the jar, just the filling for the pie. And it isn’t the complete filling: You need to add 3 or 4 eggs and 4 tablespoons of butter.* And make a crust. You can roll one out (which is simple, so if you’ve never done it before, try it—a recipe is included) or use a pre-made crust. And if you want your pie to look like the one in the photo at the left, you’ll need a few extra pecan halves.
*People on a low-cholesterol program can use egg substitute and omit the butter for an eggless, cholesterol-free pecan pie.
The filling in the jar doesn’t care about those details. It doesn‘t have to worry, because it’s so tasty, the crust doesn’t make much difference. You can bake it without one. Really, isn’t the crust on a pecan pie extraneous, with all of that dense, sweet filling and those crunchy pecans? It basically serves as an underpinning for the filling. As with a fruit crumble, you can serve the crustless main event on a plate, in a coupe, or in some more imaginative container along with ice cream or whipped cream. You can bake individual servings in custard cups. Or, if you can‘t think of life without crust, go nuts and make individual tarts.
Wherever you net out, Pecan Pie In-A-Jar makes a darn good pecan [pie][unpie], with top quality nuts and a good balance of sugar and light and dark corn syrups. It manages to be not too sweet, not cloying—as pecan pies are wont to be. (Unless you have a tried-and-true recipe, you can put in a lot of work to bake a pecan pie that can’t be eaten without a tall side of milk.)
We love this Pecan Pie In-A-Jar as a hostess gift, a stocking stuffer (although have a hearty stocking—the jar weighs almost two pounds), or as one of those inexpensive treats we buy by the dozen and hand out to those who seem deserving (it makes us very popular).
We also keep a jar in our Cabinet of Magic Tricks. Because when someone drops by for coffee and you pull a fresh-baked pecan pie out of the oven, that’s pretty magical.
