A “Drinkable Dessert” With Grand Marnier®
Here’s a new concept just in time for holiday entertaining: a drinkable dessert. They’re an increasingly hot trend right now, especially in Europe where they originated.
Both a drink and a dessert, the “drinkable dessert” combines the concept of a luxurious cocktail with a rich pastry. This recipe was developed for Grand Marnier® by world-renowned Parisian pastry chef Nicolas Boussin, a Meilleur Ouvrier de France (a national honor bestowed on the country’s great artisans, including its finest chefs). He has created and decorated pastries for the European elite, including the King of Belgium and Queen Elizabeth II, and has served his Drinkable Dessert creations in fine dining establishments across France, including the Hotel Plaza Athenée and the Chateau d’Amboise. With this recipe, he simplifies ingredients and techniques used at the professional level so the drinkable dessert can be made and enjoyed at home.
This recipe unites three favorites—dark chocolate, chantilly cream and chocolate chip cookies—with orange-flavored Grand Marnier liqueur to create a winner that will impress at the end of dinner or at a dessert party. And, it provides another use for your martini glasses!
What you will create is a frozen cocktail with a dessert on top. Starting with a frozen cocktail enables assembly of the dessert over top of the cocktail while maintaining a separation between the layers. After assembling, the cocktail is kept in the refrigerator, enabling it to thaw. This creates both a cocktail, sipped with a straw, and a dessert, eaten with a spoon. It’s a fun dessert for guests.
The recipe serves six. Preparation time is 30 minutes, and assembly requires martini glasses and cocktail straws.
Ingredients

5 ounces Grand Marnier
1 ounce orange juice
- 1 ounce lemon juice
- 1-1/2 cups heavy cream
- 1 tablespoon sugar
- 3-1/2 ounces high quality dark chocolate (60% or higher cacao content)
- Zest of 1/2 orange, finely grated
- 6 high-quality chocolate chip cookies
Directions
- Create the Grand Marnier Cocktail: In a shaker filled with ice, combine 3 ounces Grand Marnier, 1 ounce orange juice and 1 ounce lemon juice. Shake.
- Create the Chantilly Cream: Whip 1/2 cup heavy cream with 1 tablespoon sugar. Fold in 2 teaspoons Grand Marnier.
- Make the Chocolate Cream: Bring 2/3 cup heavy cream to a boil and pour over the chocolate. Add the Grand Marnier and the zest. Fold into the chocolate-whipped cream mix and assemble immediately.
To Assemble
- Pour the cocktail into martini glasses. Place immediately in the freezer and when they begin to harden, stick in the straws. Leave in the freezer for about 3 hours.
- Pour the Chocolate Cream over the top.
- Decorate with pieces of chocolate chip cookie and chantilly cream. Serve chilled.
