Recipe: Hot Beef Sundae

Crock Pot Beef Stew Was Never As Exciting As This!


Introduction

The next time you’re making beef stew—or stewing chicken, lamb or pork, or making a vegetarian stew—make enough for leftovers to use in this fun recipe, which serves the beef and mashed potatoes in sundae dishes. The family will love it!

Think of this recipe as:

  • A light main course served with soup and a large salad
  • A first course followed by a vegetarian entrée
  • A kids’ party dish, instead of hot dogs or burgers

While you can use leftovers, this recipe makes the beef stew from scratch in a crock pot (slow cooker). You can make mashed potatoes from scratch or use instant potato flakes. It was created by The Beef Checkoff.

Makes: 4 Servings
Prep Time: 1/2 hour
Cook Time: 4 hours high setting, 8 hours low setting

Ingredients

  • 1-1/2 pounds beef for stew, cut into 1 to 1-1/2-inch pieces
  • 1 large onion, chopped
  • 1 clove garlic, minced
  • 1 cup beef gravy (your own or from a jar)
  • 1 cup frozen peas or mixed vegetables
  • 4 cups mashed potatoes (your own or make instant; if using instant, use 2 cups); substitute mashed turnips or rice (although rice does not provide the “ice cream look”)
  • 2-1/2 cups milk, reduced fat
  • 1/2 cup Cheddar cheese, shredded
  • 1/4 cup sour cream (you can use reduced-fat) or plain yogurt
  • 4 red cherry or grape tomatoes
  • 1/4 teaspoon salt
  • Optional garnish: Cheddar slices cut in fanciful shapes
 
Invest in sundae dishes—a set of 12 of these is less than $30.00. You can use them for pudding, yogurt and granola, fruit salad and other desserts and snacks.

Preparation

  1. Combine beef, onions, garlic and gravy in 3-1/2 to 5-1/2-quart slow cooker; toss to coat evenly. Cover and cook on LOW 8 to 9 hours or on HIGH 4 to 5 hours or until beef is fork-tender. Add peas and cook until peas are just tender, about 5 minutes.
  2. Meanwhile, make mashed potatoes with your own recipe. If you’re using potato flakes, heat milk in medium saucepan over medium heat until just steaming. Add potato flakes and salt; stir until smooth. Remove from heat; keep warm.
  3. Using an ice cream scoop, place 2 scoops (about 1/3 cup each) mashed potatoes in each of 4 individual sundae cups or serving bowls. Divide beef mixture evenly over potatoes in each dish. For larger portions of beef stew, layer beef and potatoes like a parfait.
  4. Evenly sprinkle with shredded cheese and top with sour cream. Place 1 tomato in center of each to serve as the "cherry."
