Style Of Chocolate Brownies
Many bakers claim to make a “moist, fudgy brownie.” Todd Kelly truly delivers on this promise, but his recipes are so elegant that the brownies are never too rich. Consider these “brownie points”:
- A fudge-style brownie has a very dense and moist texture, looking more like fudge than cake. That’s because there is more butter, creating a richer, denser, heavier brownie.
- While a moist, fudgy brownie has universal appeal, too much of a good (rich, heavy) thing can do you in. But Todd Kelly’s mastery is that he tones down the sugar in his recipe, so there is a perfect balance between sweet and rich. The brownies are not sugary, so you don’t feel a one-two punch of sugar and butter. Instead, Todd adds depth and intensity through plenty of high-quality dark chocolate.
- You still get a hefty, heavy brownie that is about 2-3/4” square (they are handmade and hand cut, so sizes vary slightly; our brownies weighed in at 4.4 to 4.6 ounces).
