English Muffin Recipes

Page 2: Decorating Plain English Muffins

Actually, we apologize: there is no such thing as a plain English muffin. Every English muffin is a de facto beauty compared to a plain slice of toast. From her special fork split to her inviting nooks and crannies to that beauty dust sprinkled on top (it’s cornmeal), English muffins are special.

Recipe For Flavored Cream Cheese

Buying loose-pack flavored cream cheese at the bagel shop or deli is pretty pricey. Yet it takes no time at all to make your own, at a fraction of the price.

  1. Soften an eight-ounce package of cream cheese.
  2. Mix in 1/4 cup of flavoring—try more or less to taste. For example, you may wish to start with 1 tablespoon of chopped jalapeño.
  3. Chop ingredients to a fine texture. It takes more time, but the flavor of smaller pieces will blend better with the cream cheese than larger chunks.
  4. If you’re in a hurry, you can use a few tablespoons of dried onion or vegetable soup mix, just as with sour cream dip.
  5. For a sweet dip, pulse berries, pineapple or other fruit until you get the texture of crushed pineapple (or, buy and drain a can of crushed pineapple). You can use preserves if there is no fresh fruit at hand, but they add a lot of sugar.
  6. You can make chocolate cream cheese by adding cocoa and a small amount of sweetener (agave, artificial sweetener, brown sugar, honey, maple syrup).
  7. Stir thoroughly to blend. Refrigerate in a tightly-sealed container until ready to use.
