Graduation Cookies
Make “Diploma Fortune Cookies” With This Fun Recipe
Introduction
They’ll be talking about these cookies for years to come: Not just how charming they are to look at and how buttery good they are, but because of the fortunes inside. The inspired bakers at Land O’Lakes took a recipe for classic “cigar cookies,” a delicate butter cookie, and made them extra-special for a graduation celebration.
Surprise your favorite graduate with a batch. In fact, make several batches, because these cookies will be the hit of the party.
Preparation Time: 1 hour
Baking Time: 6 minutes
Yield: 2 dozen cookies
Ingredients

2 egg whites
-
1 tablespoon fresh lime or lemon juice

1/2 cup sugar

1/2 cup all-purpose flour
-
1/3 cup unsalted butter, melted

1 pound white chocolate or vanilla-flavored confectioner’s coating

Decoration: narrow ribbon in school colors

*These are pretty standard fortunes, such as, “Never hesitate to tackle the most difficult problems” and “You will meet an important person who will help you advance,” and so forth. You can, of course, create your own.
Preparation
Heat oven to 350°F. Lightly spray cookie sheets with no-stick cooking spray.
(If using a dark cookie sheet, first line with aluminum foil; then spray). Generously butter handle of wooden spoon. Set aside.

Combine egg whites and lime juice in large bowl. Beat at high speed until foamy. Continue beating, gradually adding sugar, until glossy and stiff peaks form. Gently stir in flour and butter.

Spoon 2 teaspoons batter onto prepared cookie sheet; evenly spread batter to 3-inch circle. Repeat with remaining batter, placing only 3 cookies on each cookie sheet. Do not reuse cookie sheets without first washing and reapplying no-stick cooking spray.

Bake for 5 to 8 minutes or until edges just begin to brown. Immediately loosen from the cookie sheet with a metal spatula. Working quickly, place buttered handle of wooden spoon on one side of cookie; carefully roll up. Keep bowl of spoon over edge of counter to make rolling easier. Slide cookie off spoon handle onto cooling rack. If cookies harden before rolling them, put cookies back into the oven until they soften (about 1 minute).
- Cool cookies completely.

Melt white chocolate or candy coating in 1-quart saucepan over low heat, stirring occasionally, until melted (3 to 4 minutes). To melt in a microwave: Microwave on HIGH for 60 seconds. Stir; continue microwaving until candy coating is melted (30 to 60 seconds). Carefully dip each end of cookie in coating. Gently shake cookie to remove excess coating. (Cookies are very fragile.) Place on waxed paper until coating is set (15 minutes). Repeat with remaining cookies and coating.
- Dip each end of cookie in coating.

Download, print and cut apart fortunes provided with this recipe or write your own fortune messages on narrow strips of paper. Insert 1 fortune inside each cookie. Tie ribbons in school colors around center of each cookie.
