Mix & Match Spiced Mousse Mini Desserts
Though pumpkin pie spice is typically found in Thanksgiving and Christmas desserts, pair it with coconut milk and you can add a burst of spice to all kinds of desserts year-round.
Here we use them in spiced mousse recipes. Each of the four variations below is based on the same pumpkin pie spice/coconut milk mousse recipe, but can be tailored to become Fudge Brownie Mousse, Banana Cream Mousse, Strawberry Shortcake Mousse or Piña Colada Mousse. Serve all flavors at once so diners can enjoy the carnival of options, or serve a different mini mousse each time you have dinner guests.

Mix & Match Spiced Mousse Minis
Ingredients For The Spiced Mousse
Preparation
- Beat cream cheese, pumpkin pie spice and 1/4 cup of the sugar in large bowl with electric mixer on medium speed until smooth and creamy. Add coconut milk; beat until well blended.
- Beat cream and remaining 1/4 cup sugar in another large bowl with electric mixer on medium speed until stiff peaks form.
- Add 1/2 of the whipped cream to cream cheese mixture; stir until well blended. Gently stir in remaining whipped cream.
- Use mousse in the center of any of the four shot-glass-sized dessert suggestions below.
- Yields mousse for 12 mini desserts.

Fudge Brownie Mousse
Ingredients
- 2/3 cup fudge sauce (chocolate sauce)
- Sliced almonds for garnish
Preparation
- Divide 1-1/2 cups brownie pieces (1/2-inch cubes) evenly among 12 (2-ounce) shot glasses.
- Using 2/3 cup fudge sauce, layer each glass with fudge sauce and spiced mousse.
- Garnish with sliced almonds.

Banana Cream Mousse
Ingredients
- 12 tablespoons crushed vanilla wafer
cookies
- 2/3 cup caramel sauce
- 1 sliced banana
- Toasted coconut for garnish
Preparation
- Spoon 1 tablespoon of coarsely crushed vanilla wafers into each of 12 (2-ounce) shot glasses.
- Using 2/3 cup caramel sauce and 1 sliced banana, layer each glass with caramel sauce, banana slices and spiced mousse.
- Garnish with toasted coconut.

Strawberry Shortcake Mousse
Ingredients
- 24 teaspoons (8 tablespoons) crushed
shortbread cookies
- 12 strawberries, halved, plus 6 strawberries, halved, for garnish
- 1 sliced banana
- Fresh mint leaves for garnish
Preparation
- Spoon 2 teaspoons of coarsely crushed shortbread cookies into each of 12 (2-ounce) shot glasses.
- Slice 12 strawberries and divide evenly among glasses.
- Layer each glass with spiced mousse and additional 1 teaspoon crushed cookies.
- Garnish with half strawberry and fresh mint leaf.

Piña Colada Mousse
Ingredients
- 1/2 cup crushed shortbread cookies
- 1/2 cup coarsely chopped toasted macadamia nuts
- 1/2 cup toasted toasted flaked coconut
- 1 can (8 ounces) crushed pineapple or pineapple tidbits
- 12 whole macadamia nuts for garnish
Preparation
- Mix crushed cookies, chopped nuts and coconut.
- Spoon 1 tablespoon cookie mixture into each of 12 (2-ounce) shot glasses.
- Drain pineapple and divide evenly among glasses.
- Layer each glass with spiced mousse and remaining cookie mixture.
- Garnish with a whole macadamia nut.
