The Prickly Margarita
This margarita doesn’t have a “prickly” personality—it’s a sweet prickly pear concoction.
Ingredients
- 2 ounces anejo tequila
- 1/2 ounce agave nectar
- 1 ounce fresh lime juice
- 1/2 ounce prickly pear puree
- 1 medium jalapeño slice
- 1/4 ounce amaretto
- 1 lime wheel (garnish)
Preparation
- Place all ingredients except amaretto in a shaker.
- Muddle Jalapeño, add ice, and shake vigorously.
- Strain over fresh ice into a rocks glass, float amaretto on top and garnish with a lime wheel.

The Rockin’ Paloma
The Rockin’ Paloma is a tangy citrus-based drink, perfectly refreshing on a warm day.
Ingredients
- 2 ounces reposado tequila
- 3 medium cucumber slices
- 1/2 ounce fresh lime juice
- 6 ounces grapefruit soda
- 1/4 ounce grenadine
- Salt for rimming
- 1 cucumber slice for garnish
Preparation
- Add Cabo, lime juice, and cucumber to pint glass, muddle, add ice and shake vigorously.
- Add soda to shaker and stir. Strain over fresh ice into a Collins glass with a salted rim.
- Drop the grenadine on top and allow it to mix in. Garnish with cucumber slice.

Tequila Sunset
A modern play on the classic tequila sunset cocktail, this one calls for pomegranate juice and framboise liqueur to get that red sunset look.
Ingredients
- 1-1/2 ounces blanco tequila
- 1 ounce pomegranate juice
- 1/2 ounce framboise liqueur
- 3/4 ounce fresh lemon juice
- 1/2 ounce agave nectar
- 3 ounces soda water
- Lemon twist for garnish
Preparation
- Place tequila, lemon juice and agave nectar in a shaker with ice, shake vigorously and strain over fresh ice into a Collins glass.
- Stir in soda water and top with Framboise and Pomegranate. Mix into drink and serve with a lemon twist.
