Photos courtesy of McCormick.   July 2008 |  | Recipes: Broccoli & Potato Frittata And Greek Turkey Burgers With Spiced Yogurt Sauce  Oregano is one of the Seven Super Spices, which all have high levels of antioxidants. At 3,602 ORAC, it has the second highest antioxidant level of the group. This herb is very easy to implement into your regular diet. You can add it to any number of savory dishes: Try it in grilled cheese, pizza, tomato sauce, grilled vegetables, meatballs and poultry, just to name a few. Click here to read about all the Super Spices.   Broccoli & Potato Frittata With a triple hit of antioxidants from oregano, rosemary and thyme, this hearty and healthy frittata makes a welcome weekend breakfast or busy weeknight supper. Leave the potatoes unpeeled to reap the benefits of the vitamins and fiber contained in the skins. Serves 6.  Ingredients

        1-1/2 cups cubed potatoes2 cups broccoli florets, coarsely chopped1 tablespoon olive oil1/2 cup onion, coarsely chopped1 teaspoon oregano Leaves1 teaspoon rosemary leaves, finely crushed1 teaspoon thyme leaves3/4 teaspoon Sea Salt, finely ground1/4 teaspoon ground black pepper6 eggs1/4 cup milk3 medium plum tomatoes, thinly sliced1/4 cup grated Asiago cheese  |  |  Preparation 
     Bring water to boil in medium saucepan. Add potatoes; cook 7 minutes or just until tender. Add broccoli; cook 1 minute longer. Drain well. Set aside.Heat oil in large ovenproof nonstick skillet on medium heat. Add onion; cook and stir 5 minutes or until softened. Stir in potatoes and broccoli. Reduce heat to medium-low. Mix oregano, rosemary, thyme, 1/2 teaspoon of the sea salt and pepper in medium bowl. Add eggs and milk; beat with wire whisk until well blended. Pour mixture into skillet. Cook without stirring 5 minutes or until eggs are just set on bottom. Arrange sliced tomatoes on top of egg mixture. Sprinkle with cheese and remaining 1/4 teaspoon sea salt. Broil 4-5 minutes until eggs are set and cheese is lightly browned.  Greek Turkey Burgers With Spiced Yogurt Sauce Enjoy the bold Greek flavors in these easy and healthful turkey burgers. The yogurt topping is delicious with grilled fish, too.  Serves 4.

          1 pound ground turkey1/2 cup reduced fat feta cheese2 teaspoons oregano leaves1/2 teaspoon thyme leaves1/2 teaspoon ground black pepper 2 teaspoons olive oil4 whole wheat hamburger rollsRed leaf lettuce, tomato and cucumber slices for burger garnish (optional)  |  Spice up your usual pizza with a teaspoon of oregano and get at least 3,602 ORAC for every slice  you eat.
 |  Spiced Yogurt Sauce  
    1/4 cup plain lowfat yogurtGround black pepperGround cumin                Sea salt, finely ground Preparation 
    Mix ground turkey, feta, oregano, thyme and 1/2 teaspoon pepper in large bowl.  Shape into 4 patties.Heat oil in large nonstick skillet on medium heat until hot.  Add patties; cook 4-5 minutes on each side or until burgers are cooked through (internal temperature of 160°F).Season yogurt to taste with pepper, cumin and sea salt.  Serve burgers on toasted rolls.
