Chocolate Cheesecake In A Goat Cheese Log
CAPSULE REPORT: Three or four years ago, our fellow editor Stephanie mentioned that the Capri chocolate goat cheese log from Westfield Farms was heavenly. It sounded great to us, but somehow, we never got around to ordering it.
Now we have, and boy do we regret our procrastination. It’s chocolate cheesecake in a 5-ounce log. A slice a day keeps the grumpies away.
This invention is better for you than regular cheesecake. First, there’s a big cholesterol savings due to the absence of eggs* (there are five jumbo eggs in our mother’s cheesecake recipe). Fresh goat cheese is also lower in calories: 60 calories per ounce, compared with 100 for cream cheese.
*Capri chocolate goat cheese ingredients include goat milk, chocolate, sugar, cocoa butter, soy lecithin, culture enzymes, vanilla and salt.
For those with lactose intolerance, goat’s milk is more easily digestible than cow’s milk (learn the difference between goat’s milk and cow’s milk).
We’ve been enjoying this cheese sliced right from the log, but it also makes a lovely dessert atop a graham cracker or piece of shortbread, plain or garnished with a raspberry or half a strawberry.
You can substitute fresh goat cheese for cream cheese in any recipe. Use your own recipes, or check out the ones on Westfield Farm’s website: regular cheesecake, chocolate cheesecake, chocolate canapés and a grilled chocolate goat cheese sandwich.
