Dieters and carb counters note: You can make the float with diet cola and no-sugar-added ice cream. Hold the sugar-laden garnishes, and it’s still delicious.
As with any recipe, the better the ingredients, the better the flavor. Choose artisan soda brands (Boylan’s, Fentimans, GuS, Steaz, The Switch) if your budget allows, and look for sprinkles and chocolate syrup from fine chocolate producers such as Guittard and Dagoba.
Brown Cow Float
Ingredients
- Chocolate syrup
- Chocolate ice cream
- Root beer
- Whipped cream, for garnish
- Chocolate sprinkles, for garnish
- Optional: 1 ounce Godiva liqueur
Preparation
- Put approximately 2-1/2 scoops of chocolate ice cream in a glass cup. Pour optional liqueur over ice cream.
- Fill glass with cola (or root beer).
- Place spoon in glass and stir gently.
- Top with chocolate syrup, whipped cream and sprinkles.
- Add straw and serve.

Classic Cola Float
Ingredients
Preparation
- Put approximately 2-1/2 scoops of vanilla ice cream in a glass cup. Pour optional liqueur over ice cream.
- Fill glass with cola.
- Place spoon in glass and stir gently.
- Add straw and serve.

Coffee Float
Ingredients
- 1/2 cup coffee
- Light cream
- Coffee soda (or cola)
- Vanilla ice cream
- Whipped cream, for garnish
- Coffee beans, for garnish
- Optional: 1 ounce coffee liqueur
Preparation
- Mix coffee with approximately 1 tablespoon light cream.
- Fill glass ¾ to top with cola; add optional liqueur. Stir gently.
- Add 2 scoops vanilla ice cream.
- Top with whipped cream and coffee beans.
- Add straw and serve.

Fizzy Orange Float
Ingredients
- 1/4 cup orange juice, no pulp
- Vanilla ice cream
- Lemon-lime soda (an artisan brand such as GuS Dry Meyer Lemon, or 7 Up, Sierra Mist or Sprite)
- Optional: 1 ounce orange liqueur
Preparation
- Pour orange juice into a glass cup. Add optional orange liqueur.
- Fill glass ¾ to top with lemon-lime soda and stir gently.
- Top with 2 to 2-1/2 scoops of vanilla ice cream.
- Add straw and serve.
