The pomegranate has sure been one busy fruit as of late. It has been cropping up in everything we’ve been eating—sorbet, salad, chicken, etc. This versatile fruit is definitely becoming a staple in the American diet, no doubt due to its health benefits. There is significant research to suggest that the antioxidants in pomegranates may prevent a slew of diseases, including prostate cancer and heart disease. We definitely have no problem jumping on the pom bandwagon and wanted to thank POM Wonderful for helping us plan this lovely fruit fiesta.

Before cooking with pomegranates, make sure you know how to extract pomegranate arils—buying already-removed arils can be a lot more expensive than purchasing whole pomegranates and removing the arils yourself.
To Extract Pomegranate Arils
- Score the pomegranate so it opens easily and submerge it in a bowl of water.
- Break open the pomegranate underwater to free the arils (they will sink to the bottom of the bowl and the membrane will float to the top). Discard the membrane.
- Sieve the remaining liquid and put the arils to one side.
If preparing arils to use in a recipe, reserve the amount required for the recipe and refrigerate or freeze remaining arils for another use. One pomegranate yields about 1/2 cup of arils.
