12 Best Foods Cookbook: Over 200 Recipes Featuring the 12 Healthiest Foods

I often go on food “kicks” of some kind or another, and love the economy of ingredient-focused cookbooks. Jacobi’s approach of centering her recipes on twelve miracle foods, selected for their healthful, antioxidant value, is perfect for the cook who wishes to pare down. These “Best” foods--black beans, blueberries, broccoli, chocolate, oats, onions, salmon, soy, spinach, sweet potatoes, tomatoes, and walnuts--are universally liked and available. The first chapter details the “life-changing power” of each food based on its high concentration of certain vitamins, phytochemicals, and other minerals, along with tips for preparation and a supporting cast of staple ingredients. There is also a helpful glossary of the technical and nutritional terms. Each of the 200 recipes calls for one or more of the healthy dozen ingredients, as illustrated by a pictorial key. I tried the pork chops with sweet potato gravy and Senegalese lemon chicken entrees, which received rave reviews. I also made the black bean hummus with tofu, which required the adjustment of extra garlic for my taste, and the delicious Vietnamese sweet potato and shrimp pancakes with lime dipping sauce--relatively labor intensive, but well worth the trouble.
