Florence has garnered quite the following with his hip television show that helps hapless cooks successfully make dishes that have constantly perplexed and flummoxed them. This book achieves many of the same goals, allowing the amateur chef to create semi-exotic dishes that will entertain the preparer and amaze the diner. The text is presented in the same down-to-earth style that makes his television show so appealing to viewers. While simplifying many complex recipes, Florence never talks down to his audience in this cookbook. That said, there is an assumed skill level inherent in each of these recipes and many, if not all, would be frustrating for the purely novice chef to undertake. The complexity of the recipes should also be noted. Not only does Florence regularly call for exotic, hard-to-obtain ingredients, he also regularly presents time-consuming procedures throughout this book and most recipes require an hour or more in the kitchen. That said, however, this is the perfect book for anyone with a passion for culinary creations that likes the idea of kicking around in the kitchen for an extended time period.
