Savory Sugars

Isn’t “savory sugar” a contradiction in terms? Think not inside the box, dear reader, or else you would miss the true joys of savory sugar.

Sweet Onion Sugar

Oh my, the sweet onion...this sugar is one of those special finds. It is something even experienced cooks probably wouldn’t whip up in their own kitchens, but once they discovered it, they would never part with it. The sugar is sparkling and pale golden, rich, sweet, and complex—just as perfectly caramelized onions should be with the addition of a lovely crunch.

  • This sugar would be a perfect finisher to almost any simple grilled, roasted or baked meat.
  • Top plain grilled or toasted crusty bread with a little drizzle of olive oil and a dusting of Sweet Onion Sugar for an instantly refined appetizer or side dish.
  • Toss, along with some fine salt and melted butter, with freshly popped popcorn.
  • Top grilled pineapple with a dusting—the sweetness of the onion itself works great in dessert preparations.

Habanero Sugar
You’ll get the habañero heat without its fruitiness in
Habañero Sugar.

Green Chili Sugar & Habañero Sugar

I’m grouping these two flavors together, because although their base chiles are distinctly different, that difference does not come through in the sugars. They both deliver inherent heat along with the sweetness, but you won’t find either the brightness of fresh green chiles in the Green Chili Sugar, or the rich fruitiness of habañero chiles in the Habañero Sugar. The Habañero Sugar is spicier than the Green Chili Sugar, as it should be; and there certainly is novelty in an ingredient that is both sweet and hot.

  • These can both be used to rim Bloody Mary and even vodka martini glasses (sparingly, and mixed with a little kosher salt, unless you’re a chile head).
  • Mix a bit into your favorite chocolate fudge recipe; the spiciness is a good counterpart to the rich chocolate.
  • Similarly, mix a tad into a cocoa rimmer for some Aztec Cocoa excitement.
