Pecan Pie Crust Recipe

This simple recipe pairs well with very sweet pies like pecan pie:

Ingredients

  • 1 cup flour
  • 1/2 teaspoon salt
  • 3/8 cup (3 ounces) Crisco
  • 3 tablespoons cold water

Preparation

  1. Mix flour and salt; blend in Crisco with mixer or pastry blender to the consistency of corn meal.
  2. Add water and shape into a ball. Chill overnight or as long as possible.
  3. Roll dough to flat circle to cover a 9" pie pan. Crimp or use a fork to press the dough around the edges of the pan.
  4. Pre-bake pie shell for 15 minutes at 300°F. Fill and continue to bake for 45 minutes for two pies or 60 minutes for one deep-dish pie.
  5. The pie will rise about one inch. It should removed from the oven when it is no longer runny but moves like gelatin when slightly shaken.
  6. The pie will fall after leaving the oven. You can carefully smooth the hot surface with a metal spatula.
  7. Serve with vanilla ice cream, unsweetened or very lightly sweetened vanilla whipped cream or Bourbon whipped cream.
