Click on the black links below to visit other pages.    How To Serve Shrimp Ceviche   Ceviche is a versatile dish. You can mix up any combination of fish and shellfish, or make it with just one variety. (EDITOR’S NOTE: Help save the planet by choosing sustainable fish and shellfish.) You can mix in: 
  Diced green, orange, red or yellow bell peppers (or a mixture) Chopped or thin-sliced red onions Diced tomatoesSliced black or green olivesSlivered cucumbers Any vegetable that appeals to you, from artichoke to zucchini You can serve it as: 
  Hors d’oeuvre, with cocktails, beer or wine First courseFish course Luncheon course, on a bed of greens Healthy, low calorie snack  You can plate it in any way that inspires you: 
  In a martini glass or goblet In a parfait glassIn a small glass bowl or ramekinIn a coquille  shells (scallop shells)—real or porcelain In a serving bowl, from which guests help themselves On a tostadaIn a taco shell On a plate in a lettuce cup, in romaine spears or on a bed of salad  We prefer a martini glass or goblet, because it’s easy to drink the delicious marinade (called tiger’s milk, leche de tigre).  You can garnish it as you wish with: 
  Cucumber spearsCrackers (Saltines are popular in Panama) Endive leaves Fresh herb sprigs (cilantro, parsley or rosemary, or try gremolata) Gourmet potato chips (that’s north-of-the-border fusion) Tortilla chips Plantain chipsTerra chips or other root chips Toast points  And don’t forge a lime wedge!  What To Drink With Ceviche
  Ceviche is acidic, which can conflict with some wines. If you want wine, choose a very dry and crisp white wine: 
   Complementary wines include Albariño from Spain; unoaked or Old World Chardonnay such as Chablis from France; Grüner Veltliner from Austria; and Muscadet, Pinot Blanc and Pinot Gris from France are good starts. For something at a connoisseur level, try French Gewürtztraminer and Riesling.Cocktails are more ceviche-friendly, especially those made with lime (like a Gin & Tonic). Margaritas are terrific!Lemonade or limeade complements the citrus in the ceviche. Feel free to mix in gin, vodka or tequila.Sparkling water with lime hits the spot.
