            Almeja is Spanish for “clam.”  Ingredients 
               1 ounce reposado tequila1 ounce blanco tequila1 ounce Clamato juice (We far prefer to mix our own tomato
            juice with clam juice and avoid all the
            HFCS in Clamato and similar
            commercial juices)
Splash of hot sauce (optional) Lime wheel for garnish   Preparation

   Combine ingredients in a shaker and shake.Serve over ice in a salt-rimmed rocks glass.(We suggest a flavored salt like Morton’s, or a savory glass rimmer like Urban Accent or Stirrings. Or mix your own using kosher salt and herbs. If you want it spicy, add fresh-ground pepper to the mix—and don’t add the hot sauce to the drink.)
Garnish with a lime wheel.   Cabo JalapeñoGarnish this one with a jalapeño chile—just remind your guests not to eat it!

        Ingredients 
 2 ounces reposado tequila1 ounce dry vermouth1 small whole jalapeño chile forgarnish (look for red rather than
 green jalapeños)
 Preparation 
                        Add ingredients to an ice-filled rocks 
		              glass.Stir and garnish with a jalapeño chile.Optional: For extra spiciness, slit open 
            the pepper and scrape some seeds 
            into the glass before garnishing.

            Ingredients 
              1 ounce blanco tequila1-1/2 ounces tomato juice1/2 ounce sherry2 slices of green or red jalapeñoCucumber spear for garnish Preparation 
               Shake ingredients with ice in ashaker.
Strain into a chilled shot glass.Garnish with one or two cucumberspears.
Slam the shot and then eat thecucumber spear to finish.
