Bacon Brittle: The Next New Candy
Sensation?

About five years ago, when we first began THE NIBBLE, a bacon peanut brittle from the Southwest had been written up elsewhere as the greatest thing since sliced bread (or perhaps, the greatest thing since sliced bacon).

We ordered some and awaited eagerly. It arrived. But it tasted like...a mistake.

Chacun a son goût, we thought.

A year or two ago, we had our second bite of a brand-new bacon brittle, made by two bacon-lovers from Atlanta.

They spent months perfecting the recipe, and—bingo—it’s a winner. We just don’t understand why, given the national passion for bacon, that artisan confectioners aren’t making more of it.
