Types Of Italian Pork Sausage
The first bite of these juicy sausages will tell you that this is superior meat. Creminelli is proud of its pork, which comes from well-cared-for animals that produce meat with excellent marbling, tenderness and flavor. The meat is mixed with organic spices and stuffed into natural pork casing. Maybe you’ve had sausage as good, but none better.
The all-natural pork sausages are made fresh and shipped frozen. Defrosted, they taste as good as the day they were made.
Barolo Sausage. Barolo wine is added to the sausage. As with the salami, the flavor is robust, although the wine can’t really be distinguished (unlike in, for example, a wine-laced pâté).
Pesto Sausage. Pesto sauce was born in the costal province of Liguria, blessed with great basil (see our review of the best pesto sauces). This Pesto Sausage is a delight, generously stuffed with fresh organic basil, fresh garlic and imported aged Parmigiano Reggiano cheese. We’d be happy if we hadn’t been seduced by the Piemonte Sausage, below.

Piccante Sausage. If you remember from the prior page, the inspiration for Salami Piccante, a spicy sausage, hails from Calabria. It is flavored with pepperoncini, also known as sweet Italian peppers or the golden Greek peppers (the kind you get in a Greek salad). The spiciness is mild; it never detracts from the flavorful pork.
Piemonte Sausage. Piemonte sausage is named after the Piedmont region of Italy, home to the Creminelli family. The Piemonte is home to some of Italy’s beautiful mountain areas, and the Piemonte Sausage is stuffed with a mix of mountain herbs, including organic rosemary. In fact, the sausage is magnificently redolent of fresh rosemary—fragrant, tasty, an exciting marriage of meat and herb. We can’t recommend it strongly enough; whether in pasta or as part of a mixed grill, this sausage is a standout.
Porcini Sausage. As with truffles, mushrooms make everything taste better. This sausage is stuffed with one of the most famous mushrooms in the world, the Porcini mushrooms of Tuscany, plus imported aged Parmigiano Reggiano cheese from Emilia Romagna. It’s a delicious sausage. (Read more about the different types of mushrooms in our Mushroom Glossary.)

Hot off the grill: Creminelli Porcini Sausage. |
Tradizionale Sausage. We’re sorry to say that, with all the glamour of the flavored sausages, the “standard” Tradizionale Sausage is a Plain Jane. There’s nothing wrong with it, of course. It only pales because the more specially flavored varieties are just that much more...special.
Whether you grill them, broil them or pan-fry them, these sausages are stars. Add them to any dish and they skyrocket. Serve them on a plate with risotto and few people will notice the risotto. Find a great roll and create the best sausage sandwich ever. Make the most memorable sausage pizza. These salsicce rock!
