Cabo Almeja Tequila Cocktail
Almeja is Spanish for “clam.”
Ingredients
- 1 ounce reposado tequila
- 1 ounce blanco tequila
- 1 ounce Clamato juice
(We far prefer to mix our own tomato
juice with clam juice and avoid all the
HFCS in Clamato and similar
commercial juices)
- Splash of hot sauce (optional)
- Lime wheel for garnish
Preparation
|
|
- Combine ingredients in a shaker and shake.
- Serve over ice in a salt-rimmed rocks glass.
(We suggest a flavored salt like Morton’s, or a savory glass rimmer like Urban Accent or Stirrings. Or mix your own using kosher salt and herbs. If you want it spicy, add fresh-ground pepper to the mix—and don’t add the hot sauce to the drink.)
- Garnish with a lime wheel.
Cabo Jalapeño
Garnish this one with a jalapeño chile—just remind your guests not to eat it!
Ingredients
- 2 ounces reposado tequila
- 1 ounce dry vermouth
- 1 small whole jalapeño chile for
garnish (look for red rather than
green jalapeños)
Preparation
- Add ingredients to an ice-filled rocks
glass.
- Stir and garnish with a jalapeño chile.
- Optional: For extra spiciness, slit open
the pepper and scrape some seeds
into the glass before garnishing.
