Fish Soup (Mediterranean-Style)

  • Add garlic croutons and serve with garlic bread
  • Add crumbled tortilla chips and shredded Gruyère cheese, and garnish with rouille, a heady mayonnaise that is the traditional accompaniment to bouillabaisse, containing cayenne and garlic
  • Garnish with freshly grated Parmesan cheese

Fruit Soup

  • Garnish with crème fraîche and a thin slice of lime (you can top the lime slice with the crème fraîche)
  • Add a fresh strawberry or a fanned strawberry
  • Garnish with toasted slivered almonds and crème fraîche
  • Serve with shortbread on the side

Gazpacho

  • Serve in a 4-ounce glass with a stick of celery to stir and sip
  • Make a Bloody Mary Soup with vodka
  • Add cooked shrimp or crabmeat to make a summer seafood soup
  • Toss over cold pasta

Lentil Soup

  • Top with a sprig of fresh thyme or chopped parsley
  • Top with fried croutons, paprika, chives or scallions
  • Add a dollop of sour cream or creme fraîche
  • Add slices of cooked smoked sausage

Lobster Bisque

Mediterranean Eggplant & Zucchini Soup

  • Serve over penne, ziti or rice
  • Mix with cooked pasta for a Mediterranean pasta salad
  • Top with Italian or French bread croutons fried in olive oil
  • Serve cold on grilled Italian or French bread for crostini
  • Bake in a crust for a vegetarian pot pie

Minestrone

  • Serve with olive oil, fried toast or Italian bread
  • Top with grated Parmesan cheese
  • Garnish with fresh basil and serve with garlic toast

Mushroom Soup

  • Serve over buttered noodles
  • Garnish with raw or sautéed mushrooms
  • Add miniature meatballs
  • Top with sour cream
  • Add color with a dash of paprika and chopped parsley
