Rum Cake & Other Spirit-Infused Cakes
There are currently three varieties of Great Spirits cakes. Each mini-bundt weighs 5.7 to 6.1 ounces (see the history of the bundt cake). According to USDA regulations, the company must list this as a two-portion serving, but it’s really an ample portion for one, and half of the bundt would look meager (except to dieters, who would do well to split it with a friend).
The cakes have a light, springy, lovely, melt-in-your-mouth quality—the opposite of rich and heavy. You can serve them at the end of a big dinner without keeling over from excess. How many of us have chosen the heavy French and Viennese pastries on the cart, only to wish, after the last forkful is gone and the heaviness has set in, that we had chosen something simpler? The Great Spirits Baking Company has done a service by creating something simple, yet elegant and very satisfying. Instead of heavy buttercream or custard, have a bit of airy whipped cream (or nothing at all—it doesn’t need it).
People tend to throw around words like rich, sinful, decadent and indulgent, whether or not they are accurate, thinking that they help make a sale. Au contraire, there are times when a judicious host is seeking the opposite—something delicious and special yet light and easily digestible, that will delight guests without plowing them under.
Double chocolate (cocoa and chocolate chunks) and Patrón XO Café Tequila Coffee Liqueur are a perfect marriage.
Dark Chocolate-Rum Raisin Cake
With Pyrat XO Reserve Rum
This cake has a light chocolate flavor; the raisins are soaked in a syrup of Pyrat’s ultra-premium barrel-aged rum. We liked it, but found the other two choices to be even more flavorful.
Mocha Double Chocolate Chunk
With Patrón XO Café Tequila Coffee Liqueur
The dual flavors of chocolate and coffee are both shown to their advantage in this recipe, each full-voiced, neither overpowering the other. It’s guaranteed to be a favorite.
With Patrón Citrónge Extra Fine Orange Liqueur
This recipe includes crystallized orange peel, almonds and almond marzipan; the result is a heavenly orange flavor and fragrance with bits of crunchy almond. It’s absolutely delicious.
For any flavor:
- Pair the cake with the corresponding spirit, served in a liqueur glass or small snifter.
- Serve with a side of whipped cream (barely sweetened or unsweetened), crème fraîche or vanilla ice cream. Those looking for an overkill experience can try rum raisin ice cream.
- Standard-garnish mint leaves might add color, but mint isn’t the right flavor and aroma to pair with the liqueur aromas. Fresh berries are best. If you can’t find good berries out of season, caramelize some banana slices.
