With Chicken, Marinated Fresh And Sun-Dried Tomatoes & Fresh Basil

Although Revival Soy’s healthy and delicious soy pastas require little more than a simple dressing of good olive oil and garlic, why not add spice things up a bit? Their recipe for Macaroni Pollame is as tasty hot as it is at room temperature, making it an ideal candidate for summer’s true joys: picnics and barbecues.
There is hardly a dish more delightful or portable than a hearty pasta salad, and this is no exception. Its simple yet flavorful combination of classic italian flavors will have you and your friends clamoring for seconds.
The recipe calls for macaroni, but any pasta shape is suitable. We love the rotini for its ability to really grab hold of ingredients. Try topping off the finished dish with some freshly grated Parmigiano-Reggiano.
Ingredients
Rotini - another fabulous pasta option.
2 ripe tomatoes, seeded and coarsely chopped
4 oil-packed sun-dried tomatoes, drained, and coarsely chopped
1 clove garlic, minced
¼ cup extra-virgin olive oil
Salt and freshly ground black pepper
8 ounces macaroni or other pasta shape
2 boneless, skinless chicken breasts
1 cup fresh basil leaves, loosely packed
Directions
Combine fresh and sun-dried tomatoes, garlic, oil, salt, and pepper in a large bowl. Marinate at room temperature for 45 minutes, stirring occasionally.
Grill the chicken and cut it into cubes.
Boil the pasta in salted water until it is al dente. Drain well, and while it is still hot, toss with the tomato mixture and the chicken.
Coarsely chop the basil and combine it with the pasta. Serve hot or at room temperature.
