Our Favorite Green Cocktail: Apple Juice For Grown-Ups
Appletini Introduction
The Appletini seems to have appeared during the Martini renaissance of the 1990s. By the turn of this century, lounges promoting 100, 200, 300 and more different “Martinis” could be found in major cities from coast to coast.
A combination of vodka, apple schnapps (liqueur) and other elements—apple juice or cider, apple purée, sweet and sour mix or lemon-lime soda, for example), the recipes vary widely.
And they expand! There’s a Spiced Apple Martini that includes spiced apple cider; the Rumpletini, made with rum; and the Caramel Appletini, made with both apple and butterscotch schnapps.
Appletini Introduction
Here’s a very fine Appletini recipe from Ultimat Vodka, a distillation of potato, rye and wheat (most vodkas contain just one grain, fruit or vegetable). The apple purée adds texture and depth of flavor. Call it the “Ultimat Appletini.”
Ingredients Per Cocktail
- 1-½ ounces vodka
- ½ ounce apple schnapps
- 1 ounce green apple coulis or purée
(see difference below)
- Juice of ½ lime
- Slice of Granny Smith apple* or apple
chip for garnish
*Splash the cut apples with a lemon or lime juice solution to prevent browning.

Preparation
- Combine all ingredients and shake with ice.
- Strain into a Martini glass. Garnish with apple.
The Difference Between Purée & Coulis
Purée (pronounced pyew-RAY) is made by lightly cooking vegetables or fruits and straining them, resulting in a thick product that can be served as is (broccoli purée or pea purée, for example) or as the base for a sauce (tomato purée, or bell pepper purée, for example).
Coulis (pronounce coo-LEE) is an uncooked purée used as a sauce. Typically, vegetable coulis are used with meat and vegetable dishes; fruit coulis used as dessert sauces. Strawberry and raspberry coulis are popular dessert garnishes.
