Recipe: Watermelon Salsa
An Even Healthier Alternative To Tomato Salsa
CAPSULE REPORT: Take advantage of summer’s watermelon and incorporate it every way you can. Salsa is a healthy recipe that can be used in a number of ways; and watermelon has more of the phytonutrient (antioxidant) lycopene than tomatoes, making watermelon salsa even healthier. Watermelon Salsa Recipe
This is a yummy salsa that can also be served as a side dish or as a salad over shredded iceberg lettuce.
Serves 12 to 18.
Ingredients

2 cans (15.5 ounces) corn kernels, rinsed and drained -or-
3-1/2 cups cooked or raw kernels from the cob

2 cans (15.5 ounces) black beans, rinsed and drained

1 red onion, chopped
-
2 jalapeño chiles, seeded and chopped

2 cloves garlic, minced
-
¼ cup chopped fresh cilantro
-
1 tablespoon ground cumin
-
2 teaspoons mild chili powder
-
Juice from 2 limes (4 tablespoons)

¼ cup olive oil
-
Salt to taste

3 cups chopped seedless watermelon
Preparation
- Mix together all ingredients except watermelon until well combined.
- Gently fold in watermelon. Chill.
- Serve with corn chips or as a side dish. For a special salad, fill Martini glasses with a base of shredded lettuce and top with watermelon salsa. Garnish with black olives on a skewer.
