Both Cupola Cookies and Cupola Clouds are made with a base of garbanzo bean flour and egg whites. Garbanzo bean flour is an excellent source of cholesterol-lowering fiber, egg whites an ideal protein. A bit of organic evaporated cane juice is used instead of refined sugar, to make the cookies subtly sweet. Each resulting bite is airy yet crispy, and flavorful. Current flavors include Chai Pistachio (shown below), Chocolate Cashew (shown above) and Espresso Walnut.
While you can enjoy your cookies with coffee, tea, flavored club soda or diet soda, and dunk them in your milk or hot chocolate (see Beverage Pairings, below), they can also be incorporated into recipes.
Crush and sprinkle them on ice cream or pudding
Mix pieces into yogurt to create a yogurt parfait
Crumble over fresh fruit or cobbler
Make a cheesecake crust
Use as a gluten-free dipper for fondue
