Bonbons

Chocolatier Amrani whips up a charming collection of bonbons, palets and . Normally, we’d just say “bonbons,” but since Chef Amrani gets detailed on his website, so shall we:

Bonbons, filled chocolates, can take many shapes. The list of shapes runs into the hundreds, but includes spheres, diamonds, acorns, butterflies, crowns, fruit and musical instruments. Amrani limits himself to three, basic shapes and a variety of custom molds, differentiated with embossing, custom cocoa-butter transfer designs and/or iridescent color.

  • The bonbons include domes filled with Banana Rum, Coffee Sour Cherry, Duo Café, Hazelnut Praline, Orange Grand Marnier and Pistachio.
  • Palets are a shape with a flat top, originally round like a hockey puck (palet is the French word for hockey puck). The term has evolved to a include squares and rectangles as well, the style preferred by M. Amrani (see the Earl Grey with the tan scroll work at right and the mauve Raspberry slender palets at top). Other palets include Almond Praline, Coconut Kaffir Lime, Organic Cinnamon Honey and Pure Dark.

The centers are fresh and rich. There’s something for everyone: Coffee lovers will delight in the Duo Cafe, fruit lovers will revel in the Raspberry (we just love chocolate/raspberry and chocolate/orange combinations) and those of us who like everything will treasure each bite. Nothing is as simple as it seems. Orange Grand Marnier has a hint of cardamom. Sour Cherry Coffee, seemingly an unusual pairing, is quite a lovely combination.

The handsome chocolate brown and lime boxes can be reused; they remain a keeper after the chocolate is a very fond memory.
