Organic Dill Pollen
This is not just some substitute for dried dill leaves. Rather, it’s a subtler, more nuanced version of the familiar dill, milder than the fresh herb but equally suited for many of its uses. We like it mixed into sauces and sprinkled over eggs, fish and chicken dishes.

How To Use The Pollens
While the pollens can be used as pre-cooking rubs or mixed into dressings and sauces, we’ve found that they are best used as finishing spices, something to sprinkle on food right before serving. Here are some cooking tips:
- Fennel pollen works best on simple dishes; anything too potent or acidic can easily mask its delicate flavors.
- Although the fennel pollen blends have been carefully crafted to match specific foods, they can be as versatile as you want them to be. A favorite spice blend can be used anywhere—your imagination is the only limit.

- Note that the fennel pollen blends contain salt, so additional salting may not be necessary.
- The plain fennel and dill pollens are unsalted, which makes them great for people on sodium-restricted diets.
