Pudding Flavors
These hard-to-resist, handmade desserts from the Sticky Toffee Pudding Company are authentically British in concept—they’re even baked in traditional basins (cups) imported from the U.K., although the are made with the finest local ingredients (even the lemon juice is Texan).
Each pudding contains a small amount of sauce. Meant to be served warm (although delicious cold and at room temperature), they melt in the mouth. In alphabetical order, the current selection includes:
English Lemon Pudding
With Tart Lemon Sauce
This light and moist lemon cake, made from butter, sugar, unbleached flour, eggs, fresh lemon zest and juice, baking powder and salt, is a perfect lemon dessert. Even at the end of a large dinner, when everyone has that stuffed feeling, it’s a welcome choice. The recipe, a moist butter sponge, was adapted from the popular lemon-curd layer cakes that Tracy sells at the Austin Farmers Market
Garnish With: Whipped cream or crème fraîche, plus a bit of fresh-grated lemon zest. For a more elaborate presentation, add fresh berries or candied citrus peel. For more pomp, add a scoop of vanilla or fruit-flavored ice cream (strawberry, black raspberry or whatever you can find or have time to make).

The Molten Chocolate Baby-Cake.

Molten Chocolate Baby-Cake
(Lava Cake)
The classic lava cake, made with fine dark chocolate from Venezuela, butter, sugar, eggs, flour, vanilla and espresso. Here, the sauce is provided by the molten “lava” center (photo at left). This cake, and related recipes, are always crowd pleasers, and normally we’d say “order to your heart’s delight.” But to do so would be to overlook the lesser-known recipes which to us are even more exciting.
Garnish With: Whipped cream or crème fraîche and seasonal berries. If it’s a birthday or other celebration, stick a candle in the top and serve with ice cream. Vanilla is an easy choice, but coffee or espresso ice cream is particularly exciting with the rich, dark chocolate flavors.
