And now, for the truly “sticky” puddings, so named for the toffee sauce that is served with them.
Sticky Ginger Pudding
With Golden Ginger Syrup
This delight is a ginger and apple cake (photo at top of page), with the beckoning scent of warm gingerbread and many familiar ingredients: butter, unbleached flour, molasses, sugar, fresh apples, eggs, candied ginger, fresh ginger, ground ginger, real English treacle, cinnamon, allspice and black pepper. The sauce is made of brown sugar, cream, ginger syrup and Stone’s Green Ginger Wine.
Garnish With: Whipped cream, crème anglais or custard sauce, plus a bit of fresh-grated orange zest. For a more elaborate presentation, add candied ginger, orange liqueur-soaked orange slices or candied orange slices.
For true voluptuousness, add vanilla, caramel or ginger ice cream. |

Sticky Toffee Pudding
With Buttery Toffee Sauce
Not well known in the U.S., sticky toffee pudding is one of the stars of British cuisine. We’ll leave it to food historians to figue out why it has not become a staple in American; with Bundt making a spectacular and simple sticky toffee cake mix (a prior Top Pick Of The Week), this situation is easily remedied.
Sticky Toffee Pudding is a light, moist cake flavored with chopped dates (themselves sticky) and vanilla (Tracy also adds some espresso) that is served warm, soaked in a sticky toffee sauce made of butter, cream and brown sugar.
Sticky toffee was popularized by Francis Coulson, chef/owner of the Sharrow Bay Country House Hotel, in England’s Lake District, in 1960. He refined the recipe of an earlier pudding, and, since he was generous in sharing the recipe with the general public, it became very popular. Sticky toffee pudding is now found throughout the U.K., from the humblest cafeterias to the finest restaurants. We can’t think of anything we’d rather dig into. |
Garnish With: Whipped cream or crème fraîche—trust us, you don’t need to sweeten the whipped cream. If it’s a birthday or other celebration, stick a candle in the top and serve with ice cream. Vanilla is great. Rum raisin might just bring on delirium.
