Recipe: Deviled Eggs

Deviled egg lovers will find something to love even more when Rick’s Picks Smokra (smoked okra) is added to the mix. You can make these for a party, then give a jar of Smokra as a party prize.

Ingredients

• 12 hard-boiled eggs, cooled (see our instructions for the perfect hard-boiled egg)
• 1/2 cup mayonnaise
• 1/2 cup Smokra, finely chopped
• 1 tablespoon Smokra brine
• Salt and freshly ground pepper to taste
• Smoked paprika for garnish
• 3-4 pieces Rick’s Picks Smokra, cut into 24 1/8-inch rounds for garnish

Preparation

1. Slice whole, peeled eggs lengthwise. Remove egg yolks and put into a bowl. Arrange whites cut-side up on a serving plate or tray and set aside.
2. To the yolks, add mayonnaise, chopped Smokra and brine and mix until creamy and smooth. Season with salt and ground pepper (taste first, since you’ve already added the tasty brine).
3. Spoon the egg yolk mixture into the egg whites (you can also use a large star tip and pastry bag to pipe filling into the egg white. Sprinkle lightly with paprika. Garnish with a slice of Smokra.
